I've been to Rubina and Samosa Garden, but not Vij's for example. Where are the best (and by best I don't necessarily mean the most expensive) places in town?

Vij's is good, but for less
Vij's is good, but for less expensive and tasty Indian fare I highly reccomend Nirvana, 2313 Main Street (at 7th). I've consistently been happy with their food.
Also, for even less money try the food fair on Hornby St. in the 500 block near Pender. They have long lines during lunch hour, people salivating while waiting for the butter chicken special ($5.50). Be warned they close at 2pm.
Good point about the Hornby
Good point about the Hornby food fair. People at my work love that one. Another good (in my white-boy opinion) food fair place is the Curry Express in Harbour Centre. There's one in Lansdowne Mall in Richmond too.
For lunchtime, food court
For lunchtime, food court type stuff, the curries at cafeteria in the Law Society building (Cambie between Robson and Smithe) are popular with us locals. They normally do butter chicken + a different veggie curry each day.
There's "Mahek" on Scott
There's "Mahek" on Scott Road (the Surrey side), and there's a banquet hall in Richmond that has the best butter chicken I've ever tasted. No fusion stuff here, just really good Indian food.

Seconding Nirvana's on Main Street; literally the best Indian food I've had in town.
India Grill and Anapurna's (both on 4th near Burrard) are also excellent.

I have eaten at Maurya and it's fabulous. It's near Granville and Broadway in Vancouver. Someone I work with mentioned that the renovation of the restaurant was featured on TLC... OOOH! :-)

Despite all the local hype, we consider ViJ's overrated. We suffered through their precious "no reversations" policy (probably designed to maximize hustle for the buck - let's push them through as quickly as possible) and found the food okay but that's all.

Seriously, Maurya is amazing
Seriously, Maurya is amazing but on the pricier side - a nice place to go out for dinner. If you want takeout, OR a nice place to go, you have to check out Saffron Indian Cuisine in Burnaby. It's in between Patterson and Metrotown skytrain stations but it's absolutely fabulous food - and it delivers!
